What is Silver Service? Facts
Silver Service has been around for hundreds of years. However, unless you have eaten at very high end restaurants, stayed in the best hotels or worked in wealthy homes, you may not have experienced silver service dining. Silver Service originates from the 17th and 18th century in upper class Britain, and it has been admired. Moreover, it has set the bar for dining across the globe. Silver Service is also called ‘service à l’anglaise’, meaning English service in French.
Service from the left
First of all, Silver service is a method of food service that includes serving food at the table. Silver service is a method of food service that is performed from the left side. The guest right of the host or principal is served first. Interestingly, often a female. The reason is because as they are typically the most prominent guest of the principal. Then the service continues clockwise. Also, plates and glasses are cleared from the right.
So, with silver service you stand behind the guest to their left side, holding the supporting silverware with your left hand and serving the food with your right hand. This technique requires a great deal of practice and dexterity.
The host forms part of the service
Traditionally the main course at a formal dinner is roast beef, fowl or game. Significantly, this will often be served on a platter which is traditionally presented to the host for them to inspect. Moreover, they will indicate if they are happy for service to commence. On the contrary, in a hotel or restaurant, these are not presented to the host as the maitre’d will do the inspection before food service begins.
Detailed silver service training highlights
- We first off teach you that silver service food is served from the left. Moreover, you service drinks and plated meals from the right.
- Furthermore, we will instruct you that meals are served to the diner from platters. The dishes are correspondingly not plated in the kitchen.
- Please note straight away that you should serve the guest to the host’s right is served first. This guest is usually female.
- Our teacher will show you how the service continues to the right.
- Of course, we will show you how plates are cleared from the right. Then we will instruct you how glasses are served from the right. Again, we will show you this, by starting with the guest to the host’s right.
- Furthermore, we will instruct you how glasses are stacked in a diagonal to the right and away. With wine (by course) in order and then water glass in front.
- Silver service is oriented for a right-handed waiter: to serve the food. Correspondingly, the waiter stands behind the guest and to the guest’s left. Furthermore, on our course, we will show you how the waiter holds or supports the platter with their left hand. Again, you serve the food with their right hand.
- Finally, it is common for the waiter to hold the serving-fork above the serving-spoon both in the right hand. We will display the use of fingers to manipulate the two as a pincer for picking up, holding and transferring the food.

A modification of silver service is known as butler service.
Interestingly, in butler service, the waiter holds the plate while the diner actually helps himself from a serving plate. Moreover, this type of service was used on Sunday evenings. In our industry, Sunday evening was a time of rest for the staff. So in fact, our much loved butler helped out at dinner.
Accordingly, those who can master this skill, deserve respect. By training, you will gain confidence and etiquette. We will make you good in performing all of the above named styles of services.
